Korean BBQ Rub

The sesame seeds really pop after a few minutes on the grill, and the brown sugar caramelizes into this perfect sticky crust on the pork belly. I've used it on chicken thighs too, and the balance of sweet and heat is just right for a backyard cookout.

I was a little worried the tamari would make it too salty, but the balance with the brown sugar is perfect. My guests couldn't stop eating the grilled pork belly I used this on.

The sesame seeds give it such a nice texture against the sweet heat, and the tamari really shines. I mixed it with my gochujang for a marinade and my chicken thighs came out perfect.
